Yusheng 鱼生

yusheng in action

Though it is a dish and not a location photo of Singapore, it is a very important yet symbolic dish that must be featured on SingaporeDailyPhoto.com nearing the Chinese New Year. Originated in 1964′s Lunar New Year in Singapore, Yusheng was invented by Master Chef Tham Yu Kai. It is a symbol of prosperity and good health. Daikon (White Radish), carrots, capsicum, turnips, red pickled ginger, sun-dried oranges, key lime leaves, Chinese parsley, chilli, jellyfish, chopped peanuts, toasted sesame seeds, Chinese shrimp crackers and Five Spice powder. All laced with a sauce using Plum sauce, rice vinegar, Kumquat paste and sesame oil. Total of 27 ingredients. Raw mackerel was originally used but these days, salmon is offered as an alternative. You can see how it is like before the ‘action’ here :)
